FRESH SALAD WITH MUSTARD AND CHIVE VINAIGRETTE

It’s back to routine after a few days of chilling out during Christmas and hanging out with friends and family. For a couple of weeks, I»ve tried to enjoy all the good food I could, without stopping to count the calories. My camera has also taken a well-deserved break. Since last week, I’ve been active once again. I’ve been enthusiastic and full of ideas, and this is the first one, so let’s start the year with this delicious and quick fresh salad with mustard vinaigrette and chives. At home, we love French-style vinaigrettes, and I have to admit it totally suits this salad.
Everyone likes to start January eating a little bit healthier and lighter, which is only normal, after the Christmas excesses. This doesn’t mean, however, that we have to give up on tasty dishes. We can have food that is delicious but that is also healthy and doesn’t make us feel guilty! Today’s recipe includes very good ingredients, some of them containing lots of vitamin C. I absolutely love how all the ingredients go together: grapefruit, kiwi, pomegranate, avocado, and celery.  I hope you like it as much as I do! 
 
INGREDIENTS 
Two kiwis
Two celery stalks
One grapefruit
One avocado
 
For the vinaigrette
Three tablespoons of AOVE
Two tablespoons of mustard
One tablespoon of apple vinegar
Chopped chives
Add salt and pepper to taste
 
METHOD
Clean and thresh the pomegranate and cut all ingredients in 1-cm cubes. Set aside.
In a small bowl, stir well all the ingredients to obtain the vinaigrette. Then, mix all fruits and veggies together in a big bowl, add dressing and enjoy.
