KING PRAWN SALAD WITH CITRONETTE

I cannot remember who was but one day someone told me she/he doesn’t have salads in winter because it’s a summer dish. Well, that’s not my case at all! I do remember this comment shocked me since I eat salads all year long no matter how hot or cold is outside. And today, despite we are in winter I’m updating the blog with one of my favourite ones: king prawn salad with citronette. 

It’s delicious and I also add grilled zucchini, cherry tomatoes, herbs de Provence, and fresh coriander. Then I season it with a classic “citronette”, which is super easy to make.

INGREDIENTS

10-12 king prawns

A few cherry tomatoes

A quarter of a zucchini

30 ml EVOO (extra virgin olive oil)

20 ml juice of a fresh lemon

A pinch of salt

Black pepper to taste

 

METHOD

Boil the king prawns in a pot with water and salt. Then drain, peel them and remove the gut. 

In a grill pan prepare the cherries and zucchini, thinly cut with a sharp knife or a mandoline. 

Then, prepare the citronette. Squeeze the lemon in a bowl, add the salt and mix well. Now add the pepper, and combine again. Then add the olive oil and continue mixing vigorously. Now you have a classic citronette. This time I decided to add a bit of herbs de Provence too.

Mix well all the ingredients with the citronette and serve. Buon appetito with this king prawn salad with citronette!
