CHOCOLATE MOUSSE WITH PISTACHIOS

Ready for another quick and delicious recipe? Today, on my blog, this chocolate mousse with pistachios. It’s heartwarming, tasty, and very easy to prepare. I’m sure you’ll have everyone at home asking for more!

Because I love mousse so much, I’ve been wanting to prepare one for quite some time now. However, I also wanted it crunchy, so I came up with the idea of adding pistachios on top. Obviously, if you are not a big fan of pistachios you can just replace them with some other nut in the recipe. It’ll be just as delicious.

Another big decision is what chocolate to use. In this particular case, I already had some 70% cocoa chocolate at home, so I used that, but of course, you can also use 80% or 90% chocolate. I also decided not to use sugar in this mousse. I assure you, if you skip the sugar and the sweeteners in this recipe, you will not notice. 

 

INGREDIENTS

140 ml (½ cup + 1 tbsp) whipping cream, very cold

100 gr black chocolate (I’ve used 70%)

3 medium-sized eggs, room temperature

1 teaspoonful cinnamon powder

A handful of pistachios

 

METHOD

Melt the chocolate in a bain-marie and set aside. Now in a bowl, whip the egg whites with a pinch of salt, and in another bowl, whip the cream. Then combine the cream and egg whites and keep them in the refrigerator. 

Now, once the chocolate is almost cold, add the egg yolks, cinnamon to the warm chocolate and mix well. Now combine this with the egg white mix, always with slow movements from the bottom up, folding the cream into the chocolate. 

Serve in bowls or individual glasses and chill in the refrigerator until it sets at least 3 hours.  Then, chop the pistachios and sprinkle on top just before serving, and…buon appetito!
