Happy New Year! Let’s start 2021 off right with these crunchy and scrumptious green asparagus and cherry tomatoes mini quiches! As you may know, I am a big quiche fan and I love to prepare them at home since I feel I am in France again enjoying one… or more! The last one I prepared for this blog was a leek quiche, simple but still delicious and today I am updating again with one of my favourite veggies: green asparagus. I couldn’t wait to spring to make them again! 

INGREDIENTS for 12 mini quiches (10 cm diameter or 4 inches)

For the dough

250 gr (2 cups) all-purpose flour

140 gr (½ cup + 2 tbsp) unsalted butter

30 ml (5 tbsp) cold water

1 tsp salt


For the filling

200 ml (½ cup + 2 tbsp) heavy cream

2 yolks

Salt and black pepper to taste

Green asparagus

Cherry tomatoes

Salt and pepper to taste


Chive to decorate



Mix the flour, butter, water and salt. Once everything is well-combined, cover the dough with clingfilm and allow to cool for at least 2 hours in the fridge. 

Then divide the dough into 12 pieces, transfer each to the moulds and bake for about 10 minutes to 180ºC (350ºF). 

Meanwhile prepare the filling. In a mixing bowl combine yolks, heavy cream, and salt. Transfer to the moulds and place the asparagus and cherrys in each one. Bake for 15 minutes more to 150ºC (300ºF) 

Remove from the oven, serve with diced chive and… buon appetito with these green asparagus mini quiches!
