APPLE AND HONEY MUFFINS

Dear readers of Cuore di Pane,

It’s been very exciting times for this blog for the last few days. The most important anecdote (the rest I will tell you hopefully in the next weeks) was the event I attended at Biocultura, the fair about the eco world. This was the first time of such an event in La Coruña although the fair is very popular in other cities in Spain. I am happy we now have the opportunity to enjoy it here from this year.

So I was planning already to go to Biocultura when it happened that Ecotur, one of the participant companies, decided to organize an event for food bloggers and I was lucky they invited me to participate (and let me bring a guest with me).

I shared with you a few days ago the information and photos about the event here. In addition, I used the occasion to visit the fair and its stands, discover new natural products and taste others soon to be released. So as I was there, and had in mind to prepare these muffins, I bought the flours needed for this recipe: oat, almond, and buckwheat. Actually writing these words right now is when I have realized I had never published a muffins recipe on the blog before. I can´t believe it as I love muffins so much!

INGREDIENTS

250 gr (1 cup) homemade apple puree

165 gr (⅔ cup) plain yogurt

115 gr (⅓ cup) honey

96 gr (1 cup) almond flour

90 gr (1 cup) oat flour

80 gr (½ cup) buckwheat flour

80 ml (⅓ cup) extra virgin olive oil

3 eggs

1 medium peeled apple

1 ½ tbsp baking powder

2 tsp cinnamon powder

½ tsp ginger powder

 

PREPARATION

Preheat the oven to 180ºC (350ºF). Take a medium bowl, add the yogurt, olive oil, apple puree, and honey. Combine well and then the eggs one at a time. Now in a big bowl add the dry ingredients, so the three types of flour, yeast, cinnamon, and ginger. Mix well and then pour the wet ingredients into the big bowl. Then grate the apple and continue mixing.

Refill ⅔ of each muffin mould and decore with a piece of apple. Bake for 25 minutes.
